Happy Birthday Gus! +pupcake recipe
Today is Gus' FIRST BIRTHDAY! And of course he got puppy cupcakes -- PUPCAKES! -- for his day.
We feel so lucky to have this tender-hearted, laid-back-until-he-hears-smells-or-sees-a-coyote-hawk-random-cow-or-delivery-person, permanently-happy, patient, loyal, goofy guy in our lives.

Pupcake Recipe
Ingredients
Pupcake Batter
- 1 cup flour
- 1/2 tsp baking soda
- 1/8 cup vegetable oil
- 1/4 cup peanut butter
- 1/2 cup applesauce
- 1/2 cup pumpkin puree
- 1 egg
Frosting
- 1/2 cup plain Greek yogurt
- 1/4 cup peanut butter
Instructions
Pupcakes
- Preheat oven to 350F.
- Prepare a standard cupcake pan with paper liners (or grease with cooking spray or butter). This recipe will make 9 pupcakes.
- In a large bowl, whisk flour and baking soda together.
- In a separate, smaller bowl mix vegetable oil, peanut butter, applesauce, and pumpkin until combined. Then add egg and stir until combined.
- Pour the wet ingredients into the bowl with the dry ingredients and stir until combined.
- Divide the mixture into the prepared cupcake pan (I only used 9 molds).
- Bake for approximately 15 minutes or until a toothpick comes out clean and the cupcakes spring ack when lightly pressed.
- Allow to cool on a wire rack.
- After cooling, add frosting (see below) and other decorations (I used all natural treats for our local pet supply store).
Frosting
- Mix Greek yogurt and peanut butter until well combined.
- Spread over the pupcakes and serve!
If not serving right away, store the pupcakes in the refrigerator.
